Menu Plan Monday ~ August 13


A very quick post this week. Don't fall over shocked everyone!

Monday ~ Lasagna (wedges, salad - I'm cheating and using a 'heat and eat' lasagna)
Tuesday ~ Parmesan Crumbed Chicken with Chilli Mayo (mini roast potatoes, carrots, broccoli)
Wednesday ~ Cottage Rolls (mashed potatoes, vegies)
Thursday ~ Chunky Shepherd's Pie (vegies - I'm on a quest to find a good Shepherd's Pie recipe)
Friday ~ Leftovers (either extra Cottage Rolls or Shepherd's Pie)
Saturday ~ Chicken Parmigiana (chips, salad)
Sunday ~ Roast Beef (roast potatoes, vegies, gravy)

Hubs is working afternoon shift all this week, so all meals will be just me and the kids. I'm trying to get into the habit of not slacking off in this 'off week', and still preparing good meals, with DH's portion being put aside for the next evening's meal. I manage it about 50% of the time, LOL.

I really like your planning menu style. I try to buy ready made stuff or go half way at least between cooking from scratch and take aways! My dh works odd hours and like you I get a little slack at cooking for just the kids and me. But lately I've been trying real hard and it means we get to eat better too! what are cottage rolls?

ps I like the way youre tidying up your blog face - format as the busy format really detracts the eyes from your interesting daily writing. A simpler style blog with your style of journal would be perfect. hope you dont mind me saying that?

Garden girl -

LOL - I don't mind at all. I actually spent a large portion of last night (well into the wee hours) playing around with a new template generator tool I found via someone else's blog. I'll finally be able to 'box off' the different sections in my sidebar, clean things up, and so on. But I tried to slip the HTML code into my 'punching bag' (ie, guinea pig) blog and it wouldn't let me, so I'm in the process of ironing out those little details. Stay tuned.

Cottage Rolls are meatless sausage rolls. I know, I didn't hold out much hope for them either when I first read the recipe. But honestly, my kids can't tell the difference. The filling is a mixture of cottage cheese, oatmeal, eggs, carrot and onion. My kids absolutely love them and I like the fact they can have a 'takeaway' dinner that is relatively healthy. I always cringe at bakery sausage rolls, with the 'gosh knows what's in it' mince filling. This recipe is still a littler higher in fat with the pastry and all, but the payoff is no meat to buy and surefire hit with the kids and at parties. I've served them up at at least three different parties and nobody could tell they didn't contain sausage mince. AND, my meat-loving husband didn't pick it either...I told him about the cottage cheese after he'd scarfed down 7 or 8, LOL.

lizzie - I have a guinea pig blog too...its good to try out there without destroying all your hard 'good' work on the regular blog...many a time I learnt that lesson the hard way!!

ok...where do you buy those meatless sausage rolls.>>????? bakery or coles? woolies?
